Golden Coconut Lentil Stew

Ingredients
- 1 tablespoon coconut oil or avocado oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh grated ginger (or 1 tsp ground)
- 1 teaspoon turmeric
- 1 teaspoon cumin
- ½ teaspoon cinnamon
- 1 cup red lentils, rinsed
- 1 can (14 oz) full-fat coconut milk
- 2 cups vegetable broth or water
- Juice of ½ lemon or lime
- Sea salt to taste
- Optional: handful of chopped greens (spinach, kale)
- Optional toppings: fresh thyme sprigs, chili flakes, drizzle of olive oil or coconut yogurt
Instructions
- Heat the oil in a pot over medium heat. Sauté onion for 3–4 minutes until soft.
- Add garlic, ginger, turmeric, cumin, and cinnamon. Stir until fragrant (about 1 minute).
- Add lentils, coconut milk, and broth. Bring to a gentle boil.
- Reduce heat, cover, and simmer for 20 minutes, or until lentils are soft.
- Add greens (if using) and stir until wilted.
- Finish with lemon or lime juice and salt to taste.
- Serve warm with your favorite grounding grain (quinoa, brown rice) or just as is.
